Ingredients
10g baking spread
2 medium eggs
6 cherry tomatoes
15g reduced-fat cheddar cheese
Chives to garnish
1 slice granary toast
Spray oil
Equipment
Chopping board, sharp knife, non-stick frying pan, spatula.
Method
- Crack both eggs into a bowl and lightly beat.
- Chop the tomatoes into quarters.
- Grate the cheese on a chopping board.
- Heat a non-stick pan with spray oil.
- Pour the eggs into the hot pan and allow to set for 1 to 1 and a half minutes.
- Stir or scramble briefly and add the tomatoes and cook for a further 1 to 2 minutes until just cooked.
- Sprinkle with cheese and chives.
- Toast the bread.
- Fold the omelette and serve with the toasted bread.
- Season well and serve.
